Pizza restaurants—how to read the menu

There's a lot more to a pizza than a takeaway in front of the TV—pizza restaurants offer a great night out in a sociable and relaxed setting. Make sure you get the most from the menu with our handy guide.

  • Anchovies are often used as a topping in pizza restaurants. These small fish have a salty taste—if they're not your cup of tea, the chef in the pizza restaurants will be happy to leave them off. Conversely, if you love the tasty little things, you can often order them as an extra in a pizza restaurant.
  • Antipasto (meaning "before the meal") is a starter usually made up of cold meats, salads and seafood served in good pizza restuarants.
  • Calzone—literally, "stocking"—is a stuffed or folded pizza. Unlike the usual pizza, the dough surrounds what would be the topping—normally consisting of cheese, tomato and ricotta. You'll find calzone on the menu of most pizza restaurants.
  • Hawaiian pizzas have, rather unusually, pineapple on the top, along with ham and cheese. They're a staple topping option in almost all pizza restaurants.
  • Fiorentina is served in traditional pizza restaurants—it comes with a cracked egg sitting in the middle of the topping, along with mozzarella, olives and spinach. The egg is normally quite gooey as it is cracked on at the last minute in most pizza restaurants, unless you specify otherwise.
  • Mozzarella is the cheese most often used in pizza restaurants. It is a mild cheese made from buffalo's milk.
  • Quattro stagioni means "four seasons"—it refers to the way the ingredients are arranged for the topping. Usually these will be buffalo mozzarella, cooked ham or prosciutto cotto, artichoke hearts and field mushrooms, although this can vary from pizza restaurant to pizza restaurant. Rather than being all mixed on top, each ingredient occupies its own space on one of the quarters of the pizza.
  • Parmigiano reggiano or parmesan cheese is a strong, salty flavoured type of hard cheese often sprinkled on top of food in pizza restaurants.
  • Pollo is the Italian word for chicken, another common topping. Many pizza restaurants also serve pasta dishes and other traditional Italian dishes—chicken is a popular ingredient in many of these, such as zuppa di pollo (chicken soup).
  • Pepperoni is a spicy, salty type of sausage used in pizza restaurants. Not actually an Italian word, it comes from the Italian name for a type of bell pepper.
